Pasta and Noodles
Standard pasta is made from durum wheat semolina. Couscous is pasta, not a grain. Egg noodles, ramen, udon, and most instant noodles contain wheat. Rice noodles, glass noodles (mung bean), and 100% buckwheat soba are naturally gluten free. Always check the label on soba as most commercial brands blend in wheat flour.
Important: Traffic light ratings reflect the default gluten status of each food. Individual products may differ. Always check the label, especially for orange-rated foods.
