Standard plain flour, self-raising flour, and bread flour are all wheat-based and contain gluten. Gluten-free alternatives include rice flour, almond flour, tapioca starch, potato starch, and purpose-blended GF flour mixes. Baking powder is gluten free. Some icing sugar brands add wheat starch as an anti-caking agent.
